Ingredients
- 1 ½ lb boneless skinless chicken thighs, cut in chunks
- 3 tbsp olive oil
- ½ cup chopped fresh cilantro
- ½ cup chopped fresh parsley
- 4 cloves garlic
- 1 tsp ground cumin
- 1 tsp paprika
- 3 tbsp lemon juice
- salt and black pepper, to taste
Steps

Blend or finely chop the oil, herbs, garlic, cumin, paprika, lemon juice, salt, and pepper into a chermoula.

Toss two thirds of it with the chicken and marinate at least 30 minutes.

Thread onto skewers and grill or pan-sear until charred and cooked through.

Spoon the remaining chermoula over the skewers.
Tips
- Keep a little chermoula aside to serve rather than reusing marinade that touched raw chicken.
- Works equally well on beef or lamb.
