Ingredients
- 1 ½ lb cod fillets
- ½ cup packed fresh cilantro
- ½ cup packed fresh parsley
- 3 cloves garlic
- 1 tsp ground cumin
- 1 tsp paprika
- 3 tbsp lemon juice
- ¼ cup olive oil
- 1 cup cherry tomatoes
- ¼ cup green olives
- salt and black pepper, to taste

Blend or finely chop the cilantro, parsley, garlic, cumin, paprika, lemon juice, olive oil, and a pinch of salt into a loose sauce.

Place the cod in a baking dish with the tomatoes and olives. Season lightly and spoon the chermoula over the fish.

Bake until the cod is opaque and flakes easily.
Tips
- Halibut, haddock, or any firm white fish works too.
