Ingredients
- 1 ¾ lb boneless, skin-on chicken thighs
- ¾ cup pitted green olives
- 2 tbsp olive oil
- 3 tbsp fresh lemon juice
- 4 cloves garlic, sliced
- 1 tsp dried oregano
- 2 tbsp chopped fresh parsley
- salt and black pepper, to taste

Heat the oven to 425°F. Pat the chicken dry and season both sides with salt, pepper, and oregano.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken skin-side down until deep golden.

Flip the chicken. Add the garlic, olives, and lemon juice around it.

Transfer the skillet to the oven and roast until the thickest piece reaches 165°F.

Rest the chicken for 5 minutes, spoon the pan juices over the top, and sprinkle with parsley.
