Ingredients

  • 3 tbsp olive oil
  • 1 cup sliced red bell pepper
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 cup crushed tomatoes
  • ¼ cup green olives
  • 1 tbsp chopped preserved lemon rind
  • 1 ½ lb cod fillets
  • ¼ cup chopped fresh cilantro
  • salt and black pepper, to taste

Tips
