Ingredients
- 2 lb cauliflower florets
- 2 tbsp butter
- 4 oz cream cheese
- ½ cup heavy cream
- ½ tsp garlic powder
- 2 cups shredded sharp cheddar, divided
- salt and black pepper, to taste

Heat the oven to 375°F. Steam or boil the florets until just tender, then drain very well.

Melt the butter, cream cheese, and cream in a saucepan over low heat, stirring until smooth. Add the garlic powder, salt, and pepper.

Stir in 1½ cups of the cheddar until melted. Fold in the cauliflower.

Transfer to a baking dish, top with the remaining cheddar, and bake until bubbly and golden.
Tips
- Drain and pat the cauliflower dry so the sauce does not turn watery.
