Ingredients
- 1 ½ lb ground lamb
- ¼ cup grated onion, squeezed dry
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh cilantro
- 2 tsp ground cumin
- 2 tsp paprika
- ¼ tsp ground cinnamon
- 1 tsp salt
- ¾ cup full-fat plain Greek yogurt
- 2 tbsp chopped fresh mint
- 1 tbsp lemon juice
- 1 clove garlic, grated
Always check labels of packaged products if you have an allergy or intolerance.
Steps
- 1
Heat the oven broiler to high with a rack 6 inches from the heat. If using wooden skewers, soak them in water for 30 minutes.
- 2
Mix the lamb with the onion, parsley, cilantro, cumin, paprika, cinnamon, and salt. Knead gently until well combined.
- 3
Divide into 8 portions and shape each around a skewer into a long, thin sausage.
- 4
Broil on a foil-lined pan, turning once, until browned and cooked through to 160°F.
- 5
Stir the yogurt, mint, lemon juice, and garlic together and serve alongside.
Tips
- Squeeze the grated onion in a towel to avoid soggy skewers.
- Ground beef works if you cannot find lamb.
- Cook in a grill pan or on an outdoor grill for a smokier flavor.
