Ingredients
- 1 ¼ lb boneless skinless chicken breasts
- 1 tbsp olive oil
- ¼ cup mayonnaise
- ½ cup freshly grated Parmesan
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, grated
- 8 leaves romaine
- salt and black pepper, to taste

Season the chicken with salt and pepper. Heat the oil in a skillet over medium-high heat.

Stir the mayonnaise, half the Parmesan, lemon juice, mustard, and garlic into a dressing. Thin with a teaspoon of water if needed.
