Ingredients
- 1 ¼ lb boneless skinless chicken breasts, cubed
- 1 tbsp olive oil
- 4 medium zucchini, spiralized
- ½ cup basil pesto (check the label for added sugar)
- 1 cup halved cherry tomatoes
- ¼ cup grated Parmesan
- salt and black pepper, to taste

Heat the oil in a large skillet over medium-high heat. Cook the chicken, seasoned with salt and pepper, until golden and cooked through.

Move the chicken to a plate. In the same skillet, cook the zucchini noodles just until barely tender.

Return the chicken, add the pesto and tomatoes, and toss until heated through.
