Ingredients
- 2 lb zucchini, cut into half-moons
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 3 oz crumbled feta
- 1 tbsp chopped fresh parsley
- salt and black pepper, to taste
Always check labels of packaged products if you have an allergy or intolerance.
Steps
- 1
Heat the oven to 425°F. Toss the zucchini with the oil, garlic, oregano, salt, and pepper on a sheet pan in a single layer.
- 2
Roast, stirring once halfway, until golden at the edges.
- 3
Toss with the lemon juice and zest, then top with the feta and parsley.
Tips
- Use two pans if needed. Crowding makes the zucchini steam instead of brown.
- Add a handful of olives for a saltier dish.
