Ingredients
- 2 medium eggplants
- ¼ cup tahini
- 3 tbsp lemon juice
- 2 cloves garlic, minced
- 3 tbsp olive oil
- ½ tsp ground cumin
- 1 large cucumber, sliced
- salt and black pepper, to taste

Heat the oven to 425°F. Pierce the eggplants all over with a fork and roast on a sheet pan until collapsed and very soft.

Cool slightly, halve, and scoop the flesh into a bowl, discarding the skin and any liquid.

Mash with the tahini, lemon juice, garlic, 2 tablespoons of the oil, cumin, and salt.

Drizzle with the remaining oil and serve with the cucumber slices.
