Ingredients
- 2 tbsp olive oil
- ¼ cup minced red onion
- 3 cloves garlic, minced
- 14 ½ oz canned diced tomatoes
- 1 tsp dried oregano
- 1 ½ lb large shrimp, peeled and deveined
- 6 oz crumbled feta
- ¼ cup pitted Kalamata olives
- 2 tbsp lemon juice
- 2 tbsp chopped fresh parsley
- salt and black pepper, to taste

Heat the oil in a large skillet over medium heat. Cook the onion and garlic until fragrant.

Add the tomatoes and oregano. Simmer until slightly thickened.

Add the shrimp in a single layer, season, and cook until just pink.

Stir in the olives and lemon juice, scatter with feta, and cover for 2 minutes until softened. Top with parsley.
Tips
- Do not overcook the shrimp. They are done as soon as they curl and turn pink.
- Serve over cauliflower rice or with a green salad.
