Ingredients

  • 1 lb ground beef
  • 2 tbsp grated onion
  • ¼ cup chopped fresh parsley
  • 2 tbsp chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 ½ cups crushed tomatoes
  • 4 large eggs
  • salt and black pepper, to taste

Steps

    Mix the beef, onion, parsley, cilantro, cumin, half the paprika, salt, and pepper. Shape into small meatballs.

    Sear the meatballs in the oil in a wide skillet until browned. Add the garlic.

    Pour in the tomatoes with the remaining paprika and simmer, covered.

    Make wells in the sauce, crack in the eggs, cover, and cook until the whites are set.

    Serve straight from the pan.

Tips

  • Cook the eggs a little longer if you prefer firm yolks.
  • Serve with sliced cucumber or a green salad.
