Ingredients

  • 2 medium ripe avocados, halved and pitted
  • 4 large eggs
  • 1 tbsp chopped fresh chives
  • 1 tsp olive oil
  • salt and black pepper, to taste

Steps

    Heat the oven to 425°F. Scoop out a little extra flesh from each avocado half to make room for the egg.

    Set the halves in a small baking dish so they stand level. Crack one egg into each, keeping the yolk intact.

    Drizzle with olive oil and season with salt and pepper. Bake until the whites are set and the yolks are as firm as you like.

    Top with chives and serve right away.

Tips

  • Use avocados that are ripe but still firm.
  • If an egg is too large for the hollow, pour off a little of the white first.
  • Use a crumpled piece of foil to keep the avocado halves from tipping.
