Ingredients
- 1 lb bulk breakfast sausage (no added sugar)
- 2 medium bell peppers, diced
- 1 tbsp olive oil
- 6 large eggs
- 1 cup shredded cheddar
- 1 tbsp chopped fresh chives
- salt and black pepper, to taste

Brown the sausage in a large skillet over medium-high heat, breaking it up, until cooked through and no longer pink.

Add the olive oil and peppers. Cook until the peppers are tender-crisp.

Make 6 small wells in the mixture and crack an egg into each. Season with salt and pepper.

Cover and cook until the whites are set. Sprinkle with cheddar, cover again until melted, and top with chives.
Tips

- Scramble the eggs into the skillet if you prefer.
