Ingredients

  • 1 tbsp olive oil
  • ¼ cup chopped onion
  • 2 stalks celery, sliced
  • 2 cloves garlic, minced
  • 1 ¼ lb boneless skinless chicken thighs
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 2 medium zucchini, spiralized
  • 2 tbsp chopped fresh parsley
  • salt and black pepper, to taste

Steps

    Heat the oil in a large pot over medium heat. Cook the onion and celery until soft, adding the garlic for the last minute.

    Add the chicken, broth, thyme, salt, and pepper. Bring to a simmer and cook until the chicken is cooked through.

    Shred the chicken with two forks and return it to the pot.

    Add the zucchini noodles and simmer for 2 minutes only. Top with parsley.

Tips

  • Add the zucchini noodles right before serving so they stay firm.
  • Store the soup and noodles separately if making ahead.
