Ingredients

  • 2 tbsp butter
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 12 oz chopped broccoli florets
  • 3 cups chicken broth (vegetable broth for vegetarian)
  • ¾ cup heavy cream
  • 2 cups shredded sharp cheddar
  • salt and black pepper, to taste

    Melt the butter in a large pot over medium heat. Cook the onion and garlic until soft.

    Add the broccoli and broth. Simmer until the broccoli is very tender.

    Blend part of the soup with an immersion blender, leaving some small pieces.

    Lower the heat, stir in the cream, then add the cheddar a handful at a time until melted. Season with salt and pepper.

  • Do not boil after adding the cheese, or it may turn grainy.
