Ingredients

  • 2 tbsp olive oil
  • 2 tbsp minced red onion
  • 2 cups fresh baby spinach
  • ½ cup halved cherry tomatoes
  • 8 large eggs
  • ¼ cup heavy cream
  • 3 oz crumbled feta
  • ¼ cup chopped pitted Kalamata olives
  • 1 tsp dried oregano
  • salt and black pepper, to taste

Steps

    Heat the oven to 400°F. Heat the oil in a 10-inch oven-safe skillet over medium heat and soften the onion.

    Add the spinach and tomatoes and cook until the spinach wilts.

    Whisk the eggs, cream, oregano, salt, and pepper. Pour into the skillet and scatter with feta and olives.

    Cook until the edges set, then bake until the center is just firm.

    Rest for 3 minutes, then slice into wedges.
