Ingredients
- 4 cups chicken broth
- 1 tbsp grated fresh ginger
- 1 tbsp tamari (gluten-free soy sauce)
- 4 large eggs, beaten
- 3 sliced scallions
- 1 tsp toasted sesame oil
- salt and black pepper, to taste
Always check labels of packaged products if you have an allergy or intolerance.
Check the label of the products you use (chicken_broth, tamari) for added sugar or starch.
Steps
- 1
Bring the broth, ginger, and tamari to a gentle simmer in a saucepan for 5 minutes.
- 2
Stir the broth in a slow circle and drizzle in the beaten eggs in a thin stream so they form ribbons.
- 3
Turn off the heat, stir in the scallions and sesame oil, and season with pepper.
Tips
- Keep the broth at a gentle simmer, not a rolling boil, for delicate ribbons.
- Many restaurant versions use cornstarch. This one does not.
