Is Moroccan Food Keto? A Practical Guide
Editorial team · 6 min read

Moroccan cooking is full of flavor: slow-cooked tagines, grilled kefta, herb sauces, olives, and warm spices. A lot of it is built on meat, fish, eggs, and vegetables, so you might guess it suits keto. The answer is: partly.
Many dishes are naturally low in carbs. Others, such as couscous, bread, sweet tagines, and sugary tea, are not. This guide separates the two, shows where the hidden carbs are, and gives you swaps and recipes to start with.
A note on authenticity: the recipes on this site are adapted, low-carb versions inspired by Moroccan flavors. They are not traditional recipes, because traditional dishes often use bread, couscous, sugar, dried fruit, and legumes that do not fit a keto plan.

Naturally low-carb Moroccan dishes
These are the building blocks that fit keto without much change.
Grilled and roasted meats
- Kefta (spiced ground meat) is mostly protein and fat. See Moroccan Lamb Kefta Skewers with Yogurt-Mint Sauce, about 4.2 g net carbs per serving.
- Chicken skewers with chermoula, such as Moroccan Chicken Skewers with Chermoula, about 2.2 g.
- Lamb and beef cooked slowly with spices.
Fish
Fish marinated in chermoula and baked or grilled is both easy and low in carbs. Try Chermoula Baked Cod (about 2.9 g net carbs per serving) or Moroccan Fish Tagine with Peppers and Olives (about 4.6 g).
Tagines
A tagine is a slow-cooked stew, named after the clay pot. When it is built from meat, olives, preserved lemon, and non-starchy vegetables, it fits keto well. Examples:
- Moroccan Chicken Tagine with Olives and Preserved Lemon, about 5.4 g net carbs per serving.
- Moroccan Beef and Zucchini Tagine, about 7.4 g.
- Moroccan Kefta and Eggs Tagine, about 4.5 g.
A basic keto tagine follows a simple pattern: brown the meat, add onion and garlic in moderation, add spices and a splash of liquid, add vegetables like zucchini, and simmer.
Eggs and salads
- Moroccan-Style Keto Shakshuka, about 7.5 g net carbs per serving. Tomatoes and peppers add carbs, so keep the portion in mind.
- Moroccan Cucumber and Mint Salad, about 5.4 g.
- Moroccan-Style Spiced Olives, about 0.6 g.
Vegetable dishes
Roasted and spiced vegetables work well, such as Moroccan Roasted Cauliflower with Tahini. Traditional salads such as zaalouk, an eggplant and tomato dish, are lower in carbs than bread-based dishes but still contain natural carbs from the tomato and eggplant, so measure your portion.
Where the hidden carbs are
Traditional Moroccan meals include several foods that do not fit keto. Knowing them helps you adapt a recipe or order at a restaurant.
| Food | Why it is a problem | What to do |
|---|---|---|
| Bread (khobz) | Served with almost every meal and used as a utensil | Skip it, and eat with a fork |
| Couscous | Made from wheat semolina, very high in carbs | Replace with cauliflower couscous |
| Sweet tagines with prunes, apricots, raisins, or honey | Dried fruit and honey are sugar | Choose tagines built on olives and preserved lemon |
| Potatoes and carrots in tagines | Starchy vegetables | Use zucchini, eggplant, or green beans |
| Legumes such as chickpeas, lentils, and fava beans | High in carbs | Leave them out or use only a tablespoon |
| Harira and other thickened soups | Often thickened with flour, rice, or legumes | Choose a broth-based soup with chicken and vegetables |
| Pastries: bastilla, msemen, and sweets | Flour, sugar, and honey | Enjoy a keto dessert instead |
| Sweet mint tea | Often made with several spoonfuls of sugar | Unsweetened or with a keto sweetener |
| Orange and fruit juices | Sugar | Water, plain tea, or sparkling water |
Smart swaps for couscous and bread
Cauliflower couscous
Finely chopped or grated cauliflower, lightly cooked with olive oil and herbs, gives you a bed for tagines and grilled meat. Moroccan Herbed Cauliflower Couscous has about 5.8 g net carbs per serving.
How to do it at home:
- Pulse cauliflower florets in a food processor until they look like grains.
- Heat olive oil in a skillet and cook for a few minutes. Do not overcook, or it turns mushy.
- Season with salt, cumin, and herbs.
- Serve instead of couscous.
Bread replacements
- Eat the dish with a fork and skip bread.
- Use lettuce leaves to wrap kefta. Moroccan-Spiced Beef Lettuce Wraps show how, with about 4.6 g net carbs per serving.
- Serve dips such as tahini sauce or eggplant dip with cucumber slices.
Sweet and mint tea
Make fresh mint tea with no sugar, or with a keto-friendly sweetener. Moroccan-Style Fresh Mint Tea has about 0.4 g net carbs per serving. See Keto Sweeteners and Baking for how to choose.
Dessert
For something sweet with Moroccan flavors, try Moroccan-Style Almond Cookies, about 1.8 g net carbs per serving.
Spices and flavor bases
Flavor is the heart of Moroccan cooking, and most of it is carb-free.
| Ingredient | What it adds |
|---|---|
| Cumin | Warm, earthy |
| Paprika | Sweet, mild color and flavor |
| Ginger and turmeric | Warmth and color |
| Cinnamon | Subtle sweetness without sugar |
| Ras el hanout | A spice blend. Check the label for sugar or fillers |
| Cilantro and parsley | Fresh, green flavor |
| Garlic and lemon | Brightness. Preserved lemon adds a salty, tangy note |
| Olives | Briny, rich |
| Olive oil | The base fat |
Chermoula
Chermoula is a fresh herb sauce made with cilantro, parsley, garlic, lemon, olive oil, cumin, and paprika. It has very few carbs. Use it as a marinade for fish and chicken, or drizzle it over roasted vegetables. See Chermoula Baked Cod and Moroccan Chicken Skewers with Chermoula.
Kefta spice mix
A simple kefta blend is cumin, paprika, cilantro, parsley, onion, and salt. It works with beef, lamb, or chicken. Try Moroccan Kefta and Eggs Tagine.
Check the sodium
Olives, preserved lemon, and some tagines can be salty. For example, Moroccan Chicken Tagine with Olives and Preserved Lemon lists about 1,020 mg of sodium per serving. If you watch your salt for health reasons, check each recipe page and talk to your doctor.
